Buckwheat, Japanese
New for 2012 Fagopyrum esculentum. Very quick to produce grain and extremely easy to grow. We have planted buckwheat as late as mid-July and still harvested a crop. Truly a crop that more people should learn to love as it is delicious and perfect for the Pacific Northwest. This variety is larger seeded than the common cover crop types and very good for flour. Used in Japan for making soba noodles. Also great for sprouting and sifted for pancakes. Buckwheat sprouts are a great salad in the middle of winter. For flour, grind coarsely with a stone mill and sift out the hulls.
