Chicory, Grumolo Rossa

Back for 2012 Red Grumolo type chicory, cold hardy and beautiful. Forms a beautiful rosette in the winter through spring. Slightly bitter, but sweetens up in the winter. The bitterness of the species is greatly reduced by frosts, soaking in cold water or with light cooking. Great cooked in risotto.
