Northern White garlic has long been understood to be one of the most cold hardy garlic varieties. It is documented to have survived -18°F temperatures in Eastern Oregon. A full flavored spicy hardneck porcelain type garlic with big, relatively easy to peel cloves. For those of us garlic lovers, big flavorful cloves are much appreciated in the kitchen. Northern White has started to gain a cult-like following with local farmers here in Oregon. Stores longer than other porcelains, matures late with high yields, and tolerates a diversity of challenging growing conditions. Stores 6-8 months with 6-8 cloves per bulb. Originating in Northern Germany and first brought to New York state. Similar to German White, German Extra Hardy, and Music. Aka, Premium Northern White.

Minimum bulb size is 2 inches across. Average 5-8 bulbs per pound.

Separate cloves but do not peel. Plant each clove 2” deep, blunt end down, from October through February. Space plants 6-8” apart in rows 1’ apart. Apply extra fertilizer in March.

Harvest bulbs in mid-July, when roughly 1⁄2 of the leaves are still green. Brush soil off of roots and hang in well-ventilated, shady spot to cure.

Select largest healthiest bulbs for seed to ensure large cloves the following year.
