Softneck Artichoke type

Corsican Red garlic has a mellow fresh flavor that is very well suited to almost any culinary use, and especially shines in Mediterranean cuisine. When chopped or crushed the cloves release a heavy sweet aroma. The bulbs have a more deep red coloration than typical softneck artichoke type varieties. Like other artichoke types, Corsican Red is good for braiding and has mid season maturity. Stores 7-10 months with 8-14 cloves per bulb. The Mediterranean island of Corsica is the namesake of this variety and has a long, interesting history – with just one fact being the birthplace of the controversial historical figure Napoleon. The island has been a part of France since 1768, yet still has strong ties to Italian culture.

Minimum bulb size for our seed garlic is 2 inches across. Average 5-7 bulbs per pound.

Separate cloves but do not peel. Plant each clove 2” deep, blunt end down, from October through February. Space plants 6-8” apart in rows 1’ apart. Apply extra fertilizer in March.

Harvest bulbs in mid-July, when roughly 1⁄2 of the leaves are still green. Brush soil off of roots and hang in well-ventilated, shady spot to cure.

Select largest healthiest bulbs for seed to ensure large cloves the following year.
