Parsley, Forest Green (Organic)

With its extra curly leaves, Forest Green parsley has a very enticing and familiar appearance. Flavor is less bold than flat leaf parsley, making it great for adding a little fresh zing and color to heavy or richly flavored recipes. Not just for garnishes, curly parsley is key for recipes like potato salad or beef stew, when you don’t want to be overpowered by too much herbal flavor. Strong, upright, medium-long stems are perfect for bunching and easy to harvest. Stems are also tasty and resemble little celery stalks that are great chopped and added to soups and stews. Forest Green is a classic curly parsley that is not as absurdly curled as moss curled types. The dark green plants are very winter hardy here in the PNW, easily surviving the ice storm of January 2024. If left to bolt and flower in its second year, parsley becomes an incredible insectary hedge, attracting all kinds of beneficial insects such as hoverflies and tiny predatory wasps. Our strain of this parsley originally came from Wild Garden Seeds and has been selected for decades to grow well under organic conditions.
Sow in clusters indoors March through May after soaking seeds overnight. Transplant groups of three to 12” centers in fertile garden soil when plants are 3” tall. Keep well-watered and harvest leaves as needed. A great choice for winter gardens in our area.
Seed Saving
Collect seeds from 15+ plants in their second year. Cut seedheads when seeds are dry, thresh by hand or by dancing, winnow to clean. Isolate from other flowering parsley (including root & flat leaf parsley) by ¼ mile.
