Snow Spike is an aptly named ornamental white flowered selection of the upper-midwest native wildflower that touts edible flowers and leaves as well as purported medicinal qualities. The minty licorice flavor makes a wonderful relaxing, throat soothing, and decongesting tea. The flowers and leaves are great for adding a bright flavor to salads, soups, desserts and drinks. The slightly bitter minty leaves blend well with other greens to make unique mixed salads. The flavor is milder than the related species Agastache rugosa Korean Licorice Mint, and their colors complement each other in the garden. Productive plants grow 3-4’ tall and 18” wide and will go dormant in the winter, but show good perennial regrowth in raised beds, containers, and well-drained soils. The prolific flowers are known for producing huge amounts of nectar for bees and beneficial insects. Attracts butterflies, honey bees, many native bees, as well as hummingbirds and night flying moths.
Sow in flats indoors or direct sow shallowly up to to ¼” deep in spring. Thin plants to 10-14.” For best quality harvest leaves before flowering. Plant this medicinal perennial in a permanent position in full sun to part shade in well drained soil.
Germination: 7-20 days at 60°-75°F
Seed Saving
Collect seeds from seedheads that are fully dry. Shell by hand or by dancing, and winnow to clean. Finish air-drying if necessary before sealing in airtight container. Some cross-pollination may occur, isolate from other A. foeniculum by ½ mile.
