Persephone White is a farm production workhorse garlic variety named for Persephone Farm, where it has been grown near Lebanon, Oregon for over 30 years. Similar to other silverskins, Persephone White garlic finishes in the field on the late side and stores well through the new year into spring. Like other silverskins, it is usually more resistant to garlic rust than other garlic types. Persephone Farm started growing this strain in the early days of their farm and have selected for quality all along the way, resulting in larger cloves and beautiful, consistent, relatively symmetrical bulb shape. They received it as Late California White, which has become a generic term for many late maturing silverskin and artichoke type varieties. This type of garlic is popular with farmers for a good reason: Yields are very good and reliable. Great variety for braiding due to its attractive white bulb wrappers and long soft necks. Spicy and sulfurous flavor raw. Cooked flavor is rich and nutty, retaining a slight bite.
Persephone White seed garlic minimum bulb size is 2″ diameter. Average 4-5 bulbs per pound, 6-8 plantable cloves per bulb.

Separate cloves but do not peel. Plant each clove 2” deep, blunt end down, from October through February. Space plants 6-8” apart in rows 1’ apart. Apply extra fertilizer in March.
Harvest bulbs in mid-July, when roughly 1⁄2 of the leaves are still green. Brush soil off of roots and hang in well-ventilated, shady spot to cure.

Select largest healthiest bulbs for seed to ensure large cloves the following year.
