Shallots

We are so excited to offer garlic and shallot varieties that fit with our mission of Bringing Biodiversity Back! We find each of these varieties to be productive, interesting, and delicious- the ultimate trifecta. We invite you to dive deeper into the wild and wonderful world of garlic diversity and try out some of these great varieties this year.

Seed Garlic and Shallots from Adaptive Seeds come directly from our farm and from a few of our farmer friends who are trusted, experienced growers. We choose only clean bulbs that meet our standards for size and quality, and we inspect each bulb both on intake and prior to shipment to help ensure planting cloves are good.

In addition to our own Adaptive Seeds grown garlic and shallots, we are excited to offer certified organic seed garlic produced by Persephone Farm in Lebanon, Oregon; Myrtle Creek Farm in partnership with Garlicana in Douglas County, Oregon, and Humming Bee Nursery in Corvallis, Oregon. Garlic and shallots are easy to grow staple crops that do best when planted September through November in our part of Oregon (and throughout most of the rest of the US, too!) For growing info, check out our “Adaptive Guide to Growing Garlic”.
